Whole mantis shrimp with the head, segmented shell and tail fan intact. The armour is a mottled grey-brown with darker banding across the ridges of the abdomen and a pale cream underside; the tail fan is edged with spines, and the eyes sit on stalks at the front behind the spiny catch-claws. They are shown four to a white plate, piled on a steel tray with a pair of tongs, and split open down the back to show the orange roe inside.

The meat is firm, sweet and a little lobster-like. Steam, boil or grill them briefly and pull the meat out of the shell, or split them and cook them shell-side down in a hot pan. The roe is prized on its own.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
