Small whole silver fish, slender through the body with a large round eye and a pointed snout, the scales bright silver with a faint blue sheen along the back. They are shown raw on a white board and on a steel bench, opened along the belly to show the roe, and pan-fried to a golden brown with the forked tails still on.

These are soft-boned enough to eat whole once cooked. Pan-fry them in a little oil until the skin crisps, grill them, or dust them and fry them hard. They also take well to a salt cure or a vinegar marinade.
